If you've ever had to skip dessert because dairy doesn't agree with you, then you know the feeling. Everyone else is grabbing a plate while you're trying to convince yourself that you don't really need something sweet.

For me, dairy has always been one of the biggest triggers for my skin. As much as I love cookies, cheesecake, and ice cream, I love clear skin even more. That means I'm always looking for dairy free desserts that don't feel like I'm settling for a less delicious version.

When we celebrated the Fourth of July with family this year, I wanted to bring something everyone could enjoy, including me. I threw these together in less than 30 minutes, and they completely disappeared. My husband even told me I need to make them at least once a month, and honestly... I don't think I'll argue with that.

The first bite honestly surprised me.

The flaky phyllo shell reminded me of baklava with its light, crispy texture. The creamy filling tasted just like a smooth no bake cheesecake without being overly sweet. Then you get the fresh strawberries and blueberries, little bits of crumbled sugar cookie, and a drizzle of honey that brings everything together.

I may or may not have licked the honey off my lips after the first bite.

Ingredients

  • Fresh strawberries, diced

  • Fresh blueberries

  • 1 package dairy free sugar cookies

  • 8 cookies, crumbled

  • ¾ container dairy free marshmallow fluff

  • 1 container dairy free cream cheese

  • 2 packages mini phyllo shells

  • Honey for drizzling

How to Make These Easy Dairy Free Dessert Bites

Mix the dairy free cream cheese and marshmallow fluff together until smooth.

Grab 8 of the sugar cookies and add them to a baggie to crush up your crumbled sugar cookies, saving to sprinkle on top.

Fill each phyllo shell with the cream cheese mixture.

Top with fresh strawberries and blueberries.

Sprinkle the cookie crumbles over each one, then finish with a drizzle of honey.

That's it. Seriously.

Make Them Your Own

One of my favorite things about this recipe is how easy it is to change up.

I made these as a Fourth of July dessert with strawberries and blueberries, but you could easily swap in raspberries, blackberries, peaches, or whatever fruit is in season. Every version would be just as delicious.

The Sweet Treat I'll Be Making Again

There doesn't have to be a holiday to make these. They're simple enough for a weeknight when you're craving something sweet but don't want to spend an hour in the kitchen.

Living dairy free has definitely challenged me to get more creative with desserts, but recipes like this remind me that I don't have to miss out just because dairy doesn't work for me.
